1)Haya gassai nabe (mushroom & tofu hot pot)

Ingredients: tofu, shiitake mushroom, maitake mushroom, carrot, konyaku (kohlrabi), black pepper and salt.




How to make: Cut tofu into bite-sized pieces and shiitake and maitake mushrooms into thin slices. Dice the carrots and cut konyaku into thin slices. Put everything into a pot with enough water to cover the ingredients and bring it to a boil. Add black pepper and salt (or vegan dashi powder), simmer for about 20 minutes, and enjoy!

2)Kabu no nikujagi (minced turnip with meat)

Ingredients: kabu (turnip), ground sesame, salt, vegan dashi powder or regular dashi powder with no animal products.

How to make: Cut tofu into small cubes and transfer to a bowl. Add one teaspoon of ground sesame for every half cup of tofu cubes in the bowl. Heat water in a pan until it starts boiling. Add vegan dashi powder (or regular dashi powder without animal products, if you prefer) to the water and stir well. When the water starts boiling again, pour it over tofu cubes with sesame in a bowl. Mix everything together with your hands until the tofu absorbs all of the sesame flavor. Make sure you don’t use too much of the flavored water because kabu cut into pieces will absorb that water as well. Cut kabu into bite-sized pieces, sprinkle with salt and mix well. Put kabu on top of tofu cubes to prevent them from drying.




3)Hitomebore (fruits & nuts mixed with sweet rice crumbs)

Ingredients: mixed fruit such as apple, banana, pear and nashi (Asian pear), chestnut, brown rice.

How to make: Cut fruit into small pieces and steam until soft. Set aside in a bowl and add steamed brown rice and chopped cooked chestnuts. Mix everything together with your hands.

4)Datemo age (fried tofu)

Ingredients: tofu, starch powder, salt and water.

How to make: Slice tofu into bite-sized pieces or squares. Combine starch and salt in a bowl and add enough water until the mixture turns into pudding like consistency. Coat the tofu pieces with starch and salt powder mixture using a sieve. Deep fry coated tofu pieces in hot oil until golden brown.

5)Negi tamago (garlic eggs)

Ingredients: garlic, vegan dashi powder or regular dashi powder without animal products, cornstarch, vegan mayonnaise.

How to make: Peel the garlic cloves. Dice one of them and finely mince the rest of them. Heat some vegan dashi powder in a pan, add minced garlic and stir fry for 30 seconds. Add diced garlic and corn starch, then cover with a lid to seal in flavors. Simmer for about 3 minutes over low heat while stirring occasionally.
